Savory Potato Salad

Ingredients

• 6 Med Potatoes cut in cubes
• 1 Med Onion Chopped
• 2 Hard Cooked Eggs Chopped
• 1 Cup Mayonaise
• 1 TBS Olive Oile
• 1 TBS Vinegar
• 1/2 TSP Dried Dillweed
• Salt and Pepper

Directions

• Cook potatoes in a small amount of boiling salted water for 10 to 15
• minutes or until tender; drain well.
• Combine potatoes, onion and eggs; set aside. Combine mayonaise,
• oil, vinegar and dillweed; gently stir into potatoe mixture. Season
• potato salad with salt and pepper to taste. Serve warm or cover and
• chill. Yield 6 to 8 servings.
