Sausage and Broccoli Casserole

Ingredients

• 1 lb sausage links, cut into
• small pieces
• 1 (10 o.z.) package frozen
• chopped broccoli
• 1/4 cup shredded mild cheddar
• cheese
• 3 tbs chopped green pepper
• 2 tbs grated onion
• 3 tbs minced freshf parsley
• 2 tbs all purpose flour
• 3 hard cooked eggs, sliced
• 1 (10 o.z.) cream of mushroom
• soup
• 1/3 cup milk
• 1/2 dry breadcrumbs
• 3 tbs melted butter or margarine
• Hot cooked rice

Directions

• Cook sausage until browned; drain. Cook broccoli according to
• package directions; drain well. Place broccoli in a lightly greased
• 1 1/2 quaret casserole. Combine sausage, cheese, green pepper,
• onion, parsley, and flour in a medium bowl; spoon half of sausage
• mixture over broccoli in casserole. Top sausage mixture with egg
• slices; spoon remaining sausage mixture over eggs.
• Combine soup and milk; pour over casserole. Combine breadcrumbs and
• butter; sprinkle over casserole. Bake at 375 degrees for 30
• minutes. Serve over hot cooked rice. Yield 6 servings.
