Tatatouille with Bowtie pasta

Ingredients

• 1 Tbsp Olive Oil
• 1 (6 oz) links sausage, cut in
• half lengthwise
• 2 tsp garlic, minced
• 1/2 C onion, diced
• 1 C green pepper, diced
• 1 C yellow squash, diced
• 1 (16 oz) jar marinara sauce
• 1-1/2 C Tomato Basil Mozzarella
• cut in strips
• 1 lb bowtie pasta cooked.

Directions

• 1. Preheat oven to350.
• 2. In large ovenproof skillet, heat olive oil and cook sausage till
• just done and golden brown; set aside and keep warm.
• 3. Add garlic, onion, green pepper, eggplant and yellow squash to
• skillet; cook til crisp tender; pour in marinara sauce.
• 4. Gently simmer 5 minutes, stir in cheese and pasta, top with
• sausage and bake for 10 minutes.
• Serves 4
