Sausage Soup

Ingredients

• 1 Tbsp Extra Virgin Olive oil
• 6 links (1 lb) Sausage
• 3 Cups spanish onion; diced 1/2 "
• 4 cans (14.5 oz) beef broth
• 1 Cup rice uncooked
• 1 Can (28 oz) Italian Tomato with
• basil
• 1 tsp dried basil
• 1/4 tsp black pepper
• 1/2 cup parmesan grated cheese

Directions

• 1. Heat olive oil in large soup pot over medium heat. Add sausages
• and brown for 2 minutes per side. Remove from pot.
• 2. Add chopped onions and cook until translucent, about 5 minutes
• (do not brown)
• 3. Add beef stock, rice and tomatoes. bring to boil; reduce heat to
• medium-low and simmer 20 minutes until rice is tender.
• 4. While soup is simmering, remove casing from sausages by cutting
• a shallow leghtwise cut; peel off casing. cut sausages crosswise
• into 1/2 " wide pieces.
• 5. Return sliced sausages to pot. Season with basil and pepper;
• simmer 2 minutes to reheat sausages.
• 6. Ladle soup into crocks and sprinkle with parmesan cheese.
