Chines Fried Rice

Ingredients

• 1 tbs. butter
• 1 3/4 cups water
• 2 eggs
• 1/2 tsp. salt
• 1 cup peas
• 1 tsp. salt
• cube of fresh ginger root(1 in.)
• 1 clove garlic
• 2/3 water or chicken stock
• 1 tbs. soy sauce
• 1 1/4 cups long grain rice
• 1/2 head of chinese cabbage
• 1/2 pound small chicken
• 1 small onion
• 1 tbs. vegetable oil

Directions

• Cook the rice. Cook the peas in boiling water, slightly salted
• water for 5 minutes, then drain them. Peel the ginger and chop it
• finely. Peel and crush the galic. Slice the onion and the Chinese
• cabbage. Heat the oil in a large skillet and fry the onion, garlic,
• and ginger in it gently, stirring constantly for about 5 minutes. Add
• the sliced Chinese cabbage to the skillet. Cook it over high heat for
• about a minute, stirring all the time. Add the rice, water, and soy
• sauce, then the chicken and peas. Stir everything together and cook
• it for a few minutes. Beat the eggs. Make a hollow in the rice, pour
• in the eggs, and cook them for a few minutes, then stir them into the
• rice.
