Chicken and Barley Chili

Ingredients

• 1 Cup Chopped Onion
• 1 Clove Garlic Minced
• 1 TBS Veg Oil
• 2 Cups Water
• 1 Can Chicken Broth
• 1 Can Whole Kennel Corn
• 1 4o.z. Green Chilies Chopped
• 1 TBS Chili Powder
• 1/2 TSP Ground Cumin
• 3 Cups (1.5#) Cooked Chicken
• 3/4 Cup Barley
• 1 Can Chopped Tomatoes
• 1 can (16o.z.) Tomato Sauce

Directions

• in a 4-quart saucepan or dutch oven, cook onion and garlic in oil
• until onion is tender. Add remaining ingredients except chicken.
• Bring to a boil. Reduce heat to low; cover. Simmner 10 minutes,
• stirring occasionally. Add cooked chicken; continue simmering 5 to
• 10 minutes or until chicken is heated through and barley is tender.
• Add additional water or chicken broth if chili becomes too thick upon
• standing.
