Moroccan Chicken Stew

Ingredients

• Chicken Breasts (4 ea)
• 1 can diced tomatoes (14 o.z.)
• 1 can Chicken Broth
• 1/2 med butternut squash cubbed
• 1 can garbanzo beans drained
• 1 tsp cumin
• 1/2 tsp cinnamon
• 1/2 tsp salt
• 1/8 tsp pepper
• 1/2 cup frozen peas
• 1 cup uncooked couscous

Directions

• Combine all ingredients except peas and couscous in large saucepan.
• Mix well.
• Bring to a boil. Reduce heat; simmer, stirring occasionally, 20
• minutes or until squash is tender and internal jices of chicken run
• clear.
• Stir peas into chicken mixture, simmer 5 minutes. Meanwhile, prepare
• couscous according to package directions.
• Serve chicken with couscous in large pasta bowl
