Calabaza Guisada con Puerco

Ingredients

• 2 pounds pork chops, boned and
• cubed
• 2 tablespoons vegetable oil
• 2 small calabaza or 2 large
• zucchini, peeled and diced
• 1/4 teaspoon groun cumin
• 1/4 teaspoon pepper
• 2 cloves garlic, minced
• 1/2 teaspoon salt
• 1 (14 1/2 o.z.) can tomatoes
• drained
• 1 small onion, chopped
• Hot cooked rice (optional)

Directions

• Cook pork in hot oil until browned. Add remaining ingredients except
• rice. Cover; simmer 30 minutes or until squash is tender. Serve
• over hot cooked rice, if desired.
• Yield: 4 servings.
