Pasta Primavera

Ingredients

• 1 pound pasta of your choice
• 1/4 cup extra-virgin olive oil
• 2 teasponns minced garlic
• 6 cups mixed seasonal vegetables
• (such as chopped carrots,
• asparagus tips, fresh peas, corn
• kernels)
• 1 1/2 cups homemade chicken stock
• or canned broth
• 1/4 cup chopped fresh basil leave
• 2 tablespoons chopped fresh
• parsley
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
• Grated parmesan cheese (optional)

Directions

• Bring a large pot of salted water to boil. Add the pasta and cook
• according to the package directions until it is just tender.
• Meanwhile, heat the oil in a large skillet. Add the garlic and
• vegetables, and saute for 4 to 5 minutes over medium heat, or until
• just tender.
• Add the chicken stock, basil, parsley, salt, and pepper, and bring to
• a boil over high heat.
• Remove the skillet from the heat and keep warm.
• Drain the pasta thoroughly and transfer it into a warmed serving
• bowl. Toss it with the vegetable sauce and serve immediately,
• sprinkled with freshly grated parmesan, if desired.
