Sausage and Peppers

Ingredients

• 2 lb Sweet or Hot italian
• Sausage, cut to bite size
• 1 cup water
• 4 med size green bell pepper cut
• into bite size pieces
• 2 med onion, cut bite size
• 2 tbs minced fresh garlic
• 2 can (28 o.z.) crushed tomatoes
• 2 tsp italian seasoning
• 1 tsp salt

Directions

• In a large skillet, bring the sausages and water to a boil over high
• heat. Reduce the heat to low. Cover and simmer for 4 to 5 minutes,
• or until the sausages are no longer pink. Remove the skillet from
• the heat. Drain off the water and sausage fat.
• Add the bell peppers, onion, garlic, tomatoes, seasoning, and salt to
• the skillet and bring to a boil over medium high heat. Reduce the
• heat to low. Cover and simmer for 8 to 9 minutes, stirring
• occasionally, until the vegetables are tender.
• Serve right away.
