Macaroni casserole

Ingredients

• 1 1/2 lbs. ground beef
• 1 med green pepper, diced
• 1 (6 o.z.) can tomato paste
• 1 (8 o.x.) can tomato sauce
• salt
• 3/4 tsp. oregano leaves
• 1/4 tsp. crushed red pepper
• 2 to 3 cup elbow macaroni, cooked
• 1 c. creamed cottage cheese
• 1 c. grated chedddar cheese

Directions

• Cook the ground beef in a large saucepan until brown, stirring
• frequently. Then drain off fat. Add the onions and green pepper and
• cook for 1 minute. Stir in the tomato paste, tomato sauce, 1 1/2
• teaspoons salt, oregano, red pepper and cover. Cook over low heat
• for 20 minutes. Place half the cooked macaroni in a 2 1/2 quart
• casserole and add half the beef mixture. Spoon cottage cheese over
• beef mixture and sprinkle with 1/4 cup of cheddar cheese. Repeat
• layers of remaining macaroni; beef sauce and cheddar cheese.
• Bake in 375 degree oven for 15 minutes longer. Cover loosely
• with foil and bake for another 15 minutes. Serves 6.
