Fajitas

Ingredients

• 1 onion, chopped
• 2 T. chili powder
• 2 cloves garlic, chopped
• Juice of 1 lime
• 1 tsp cumin
• 1 tsp oregano, Mexican salsa
• Salt and pepper, sour cream
• 1 bottle beer, flour tortillas
• 6 skinless, boneless chicken
• breasts, cut in 2 inch strips
• Oil, green & red peppers
• Onion, cut in wedges

Directions

• Blend all ingredients except chicken in food porcessor.
• Marinate chicken at least 30 minutes, preferably overnight. In a
• large saute pan heat some oil and add some onion wedges, green and
• red pepper wedges, garlic, salt and pepper. Toss for a bit and then
• add the chicken strips. Saute, stirring constantly until the chicken
• is cooked through. Serve with flour tortillas for wrapping and add
• sour cream, Mexican salsa and raw onion slices.
