Chicken in Wine Sauce

Ingredients

• 5 whole chicken breast
• Salt
• Ground nutmeg
• 2 tbp melted butter or margarine
• 2 tbp minced onion
• 1/4 # mushrooms
• 2/3 C. Dry white wine
• 1/4 C cashews (optional)
• 1 tsp cornstarch
• 2 tsp dry white wine
• Hot cooked rice

Directions

• Sprinkle chicken with salt and nutmeg; bwown each side in butter in a
• heavy skillet. Add onion, mushrooms, and 2/3 cup wine; add cashews,
• if fesired. Bring to a boil; reduce heat, cover, and simmer 15
• minutes. Remove chicken.
• Combine cornstarch and 2 teaspoons wine; mix well and stirr into
• skillet. Cook, stirring constantly, until sauce is thickened.
• Serve chcien and sauce over hot cooked rice. Yield 2 servings.
