Pork Chow Mein

Ingredients

• 3 # lean pork, cubed
• 2 C. diced celery
• 2 C. diced onion
• 2 tbs vegetable oil
• 1 (16 o.z.) can bean sprouts,
• 1 (8 o.z.) bamboo shoots, drained
• 1 (8 o.z.) can sliced water
• chesnuts, drained
• 2 C. water
• 1 C. soy sauce
• 1/2 C. water
• 1/4 C. cornstarch
• Hot cooked rice
• 1 (3 o.z.) can chinese noodles

Directions

• Saute pork, celery and onion in oil in a Dutch oven until browned.
• Cover and simmer 45 to 55 minutes or until jpork is tender; drain off
• drippings. Stir next 5 ingredients into pork mixture; bring to a
• boil. Lower heat. combine 1/2 cup water and cornstarch; stir until
• smooth, and add to pork mixture. Cook, stirring constantly, until
• thickened and bubly. Serve over rice, and garnish with noodles.
• Yield 8 to 10 servings
