Marinated Flank Steak

Ingredients

• 1/4 Cup reduced sodium soy sauce
• 2 teaspoons honey
• 2 teaspoons grated fresh ginger
• root, or 1 tsp ground ginger rt
• 2 teaspoons finely chopped fresh
• lemon grass or lemon zest
• 2 Garlic cloves, finely chopped
• 1/2 fluid o.z. dry sherry
• Pinch crushed red pepper flakes
• 2 lb flank steak
• 2 teaspoons olive oil
• Salt and freshly ground black
• pepper to taste

Directions

• To prepare marinade, in gallon-size sealable plastic bag, combine soy
• sauce, honey, ginger, lemon grass, garlic, sherry and red pepper
• flakes; add steak. Seal bag, squeezing out air; turn to coat steak.
• Refrigerate overnight or up to 24 hours, turning bag occasionally.
• Remove meat from refrigerator at least 30 minutes before broiling.
• Preheat broiler. Drain and discard marinade; dry meat with
• paper towel. Rub veri lightly with oil. Broil on a rack 3 inches
• from heat approximately 4 minutes each side, turning only once and
• salting cooked side only.
• Season with pepper. Allow meat to rest about 2-3 minutes before
• carving into thin diagonal slices.
