Sausage Kale Sauce

Ingredients

• 12 o.z. fresh kale
• 8 o.z. sweet Italian-style sausag
• 1 Tbs all-purpose flour
• 1 Cup chicken broth
• 1 Can (14 o.z.) diced tomatoes in
• juice
• 1 Can (16 o.z.) red kidney beans,
• 1/2 tsp crushed hot red pepper
• flakes
• 1 lb rotini (twist) pasta cooked

Directions

• Wash the kale and tear the leaves off the stems and into bite-size
• pieces (discard the stems).
• In a large nonstick skillet, cook the sausage over medium heat for
• about 3 minutes, stirring often, until browned. Remove the sausage
• with a slotted spoon to a plate.
• Put the kale in the skillet and toss for about 45 seconds, or until
• the kale turns bright green. In a small bowl, stir the flour into
• the broth. Add to the kale and bring to a boil.
• Add the tomatoes, beans, and crushed red pepper.
• Simmer for about 6 minutes for the flavors to blend. Stir in the
• sausage and simmerfor 1 minute more or until heated through. Toss
• the sauce with hot pasta and serve right away.
• Serves 5.
